Classic Hummus

Silky smooth, restaurant-quality hummus made from scratch. The secret is peeling the chickpeas.

  • 2 cans (15 oz each)canned chickpeas, drained (skins removed)
  • ⅓ cuptahini
  • 3 tbsplemon juice
  • 2garlic cloves
  • 3–4 tbspice water
  • 2 tbsp, plus more for servingolive oil
  • ½ tspcumin
  • ¾ tspsalt
  • for garnishpaprika and parsley

Instructions

  1. 1.In a food processor, blend tahini, lemon juice, and garlic for 1 minute until very smooth.
  2. 2.Add chickpeas, cumin, and salt. Process 2 minutes, scraping down sides.
  3. 3.With motor running, drizzle in ice water 1 tbsp at a time until hummus is very smooth and fluffy, about 2 more minutes.
  4. 4.Taste and adjust salt and lemon. Transfer to a bowl.
  5. 5.Drizzle with olive oil and sprinkle with paprika and parsley. Serve with pita, vegetables, or crackers.

Notes

For the smoothest hummus, peel each chickpea — it takes a few extra minutes but the texture difference is remarkable.
