Instant Pot Chicken Broccoli and Rice

- 2 tablespoonsvegetable oil
- 2small onions, diced
- 3 poundsboneless skinless chicken breasts, cut into cubes
- 2 cupslong grain white rice
- 1½ teaspoonsgarlic powder
- 1 teaspoonsalt
- 1½ teaspoonspepper
- 5 cupschicken broth
- 1 cupmilk, warmed
- 4 cupsfresh broccoli, cut into small pieces
- 4 cupsshredded cheddar cheese
Instructions
- 1.Turn Instant Pot onto the sauté setting. Add oil and heat until hot. Add the chicken and onion. Cook until the onion begins to soften, about 3–4 minutes.
- 2.Add the broth and use a spatula to scrape up all the browned bits from the bottom of the pan. Spread the chicken across the bottom of the Instant Pot and add rice, broth, and seasonings.
- 3.Cook on manual high pressure for 5 minutes. When timer is up, let the mixture rest naturally for 10 minutes, then move valve to venting.
- 4.Release any remaining pressure. Open the lid and quickly stir in the broccoli and warmed milk. Cover the lid and let rest an additional 5–10 minutes.
- 5.Stir in the cheese until well combined, adding more warmed milk if needed. Serve immediately.
