Classic Caesar Salad

  • 2 headsromaine lettuce hearts
  • ½ cupParmesan, shaved
  • 2 cupscrusty bread, cubed
  • 3 tbspolive oil
  • 3garlic cloves
  • 1 tspanchovy paste
  • 1 tspDijon mustard
  • 1 tspWorcestershire sauce
  • 2 tbsplemon juice
  • ¼ cupmayonnaise
  • to tastesalt and black pepper

Instructions

  1. 1.Preheat oven to 375°F. Toss bread cubes with 1 tbsp olive oil and a pinch of salt. Bake 8–10 minutes until crisp.
  2. 2.Mince garlic and mash into a paste. Whisk with anchovy paste, mustard, Worcestershire, lemon juice, and mayonnaise until smooth. Season to taste.
  3. 3.Chop romaine into bite-size pieces and place in a large bowl.
  4. 4.Toss romaine with dressing. Add croutons and half the Parmesan and toss again.
  5. 5.Serve topped with remaining Parmesan and freshly cracked pepper.
