Classic Caesar Salad

- 2 headsromaine lettuce hearts
- ½ cupParmesan, shaved
- 2 cupscrusty bread, cubed
- 3 tbspolive oil
- 3garlic cloves
- 1 tspanchovy paste
- 1 tspDijon mustard
- 1 tspWorcestershire sauce
- 2 tbsplemon juice
- ¼ cupmayonnaise
- to tastesalt and black pepper
Instructions
- 1.Preheat oven to 375°F. Toss bread cubes with 1 tbsp olive oil and a pinch of salt. Bake 8–10 minutes until crisp.
- 2.Mince garlic and mash into a paste. Whisk with anchovy paste, mustard, Worcestershire, lemon juice, and mayonnaise until smooth. Season to taste.
- 3.Chop romaine into bite-size pieces and place in a large bowl.
- 4.Toss romaine with dressing. Add croutons and half the Parmesan and toss again.
- 5.Serve topped with remaining Parmesan and freshly cracked pepper.
