- 2 lbsripe tomatoes
- 1 largeonion, quartered
- 6garlic cloves
- 3 tbspolive oil
- 2 cupsvegetable broth
- ¼ cupheavy cream
- ¼ cupfresh basil
- 1 tspsugar
- to tastesalt and pepper
Instructions
- 1.Preheat oven to 425°F. Halve tomatoes cut-side up on a baking sheet with onion and garlic. Drizzle with olive oil and season.
- 2.Roast 30 minutes until tomatoes are caramelized and slightly charred.
- 3.Transfer everything (with all juices) to a pot. Add broth and bring to a simmer.
- 4.Blend until smooth with an immersion blender or in batches in a standard blender.
- 5.Stir in cream, basil, and sugar. Season to taste. Simmer 5 more minutes and serve.
Notes
Serve with crusty bread or a grilled cheese sandwich for dipping.
