  • 2 lbsripe tomatoes
  • 1 largeonion, quartered
  • 6garlic cloves
  • 3 tbspolive oil
  • 2 cupsvegetable broth
  • ¼ cupheavy cream
  • ¼ cupfresh basil
  • 1 tspsugar
  • to tastesalt and pepper

Instructions

  1. 1.Preheat oven to 425°F. Halve tomatoes cut-side up on a baking sheet with onion and garlic. Drizzle with olive oil and season.
  2. 2.Roast 30 minutes until tomatoes are caramelized and slightly charred.
  3. 3.Transfer everything (with all juices) to a pot. Add broth and bring to a simmer.
  4. 4.Blend until smooth with an immersion blender or in batches in a standard blender.
  5. 5.Stir in cream, basil, and sugar. Season to taste. Simmer 5 more minutes and serve.

Notes

Serve with crusty bread or a grilled cheese sandwich for dipping.
