Moist, tender banana bread with a crackly sugar crust — the perfect use for overripe bananas.

  • 3 largeoverripe bananas, mashed
  • 1½ cupsall-purpose flour
  • ⅓ cupbutter, melted
  • ¾ cupbrown sugar
  • 1 largeegg
  • 1 tspvanilla extract
  • 1 tspbaking soda
  • ¼ tspsalt
  • ½ tspcinnamon
  • ½ cupwalnuts (optional)

Instructions

  1. 1.Preheat oven to 350°F. Grease a 9x5 loaf pan.
  2. 2.Mash bananas in a large bowl. Stir in melted butter.
  3. 3.Mix in sugar, egg, and vanilla. Stir in baking soda, salt, and cinnamon.
  4. 4.Fold in flour until just combined. Fold in walnuts if using. Do not overmix.
  5. 5.Pour into prepared pan. Bake 55–65 minutes until a toothpick comes out clean.
  6. 6.Cool in pan 10 minutes, then turn out and cool on a rack before slicing.

Notes

The blacker the bananas, the sweeter and more flavorful the bread. Do not use fresh bananas.
