Moist, tender banana bread with a crackly sugar crust — the perfect use for overripe bananas.

- 3 largeoverripe bananas, mashed
- 1½ cupsall-purpose flour
- ⅓ cupbutter, melted
- ¾ cupbrown sugar
- 1 largeegg
- 1 tspvanilla extract
- 1 tspbaking soda
- ¼ tspsalt
- ½ tspcinnamon
- ½ cupwalnuts (optional)
Instructions
- 1.Preheat oven to 350°F. Grease a 9x5 loaf pan.
- 2.Mash bananas in a large bowl. Stir in melted butter.
- 3.Mix in sugar, egg, and vanilla. Stir in baking soda, salt, and cinnamon.
- 4.Fold in flour until just combined. Fold in walnuts if using. Do not overmix.
- 5.Pour into prepared pan. Bake 55–65 minutes until a toothpick comes out clean.
- 6.Cool in pan 10 minutes, then turn out and cool on a rack before slicing.
Notes
The blacker the bananas, the sweeter and more flavorful the bread. Do not use fresh bananas.
