Classic Fudgy Brownies

Dense, fudgy brownies with a crinkly top and intense chocolate flavor. No mixer needed.

  • 6 ozdark chocolate (70%), chopped
  • ½ cupbutter, unsalted
  • 1¼ cupssugar
  • 3 largeeggs
  • 1 tspvanilla extract
  • ¾ cupall-purpose flour
  • ¼ cupcocoa powder
  • ½ tspsalt

Instructions

  1. 1.Preheat oven to 350°F. Line an 8x8 pan with parchment paper, leaving overhang.
  2. 2.Melt chocolate and butter together in a heatproof bowl over a saucepan of simmering water, or in the microwave in 30-second bursts. Stir smooth and cool slightly.
  3. 3.Whisk sugar into chocolate mixture. Add eggs one at a time, whisking well after each. Add vanilla.
  4. 4.Fold in flour, cocoa, and salt until just combined. Do not overmix.
  5. 5.Pour into prepared pan. Bake 22–26 minutes until edges are set and center has moist crumbs on a toothpick.
  6. 6.Cool completely in pan before lifting out and slicing.

Notes

Pull them out when a toothpick has moist crumbs — not clean. Overbaking is the enemy of a fudgy brownie.
