Dense, fudgy brownies with a crinkly top and intense chocolate flavor. No mixer needed.

- 6 ozdark chocolate (70%), chopped
- ½ cupbutter, unsalted
- 1¼ cupssugar
- 3 largeeggs
- 1 tspvanilla extract
- ¾ cupall-purpose flour
- ¼ cupcocoa powder
- ½ tspsalt
Instructions
- 1.Preheat oven to 350°F. Line an 8x8 pan with parchment paper, leaving overhang.
- 2.Melt chocolate and butter together in a heatproof bowl over a saucepan of simmering water, or in the microwave in 30-second bursts. Stir smooth and cool slightly.
- 3.Whisk sugar into chocolate mixture. Add eggs one at a time, whisking well after each. Add vanilla.
- 4.Fold in flour, cocoa, and salt until just combined. Do not overmix.
- 5.Pour into prepared pan. Bake 22–26 minutes until edges are set and center has moist crumbs on a toothpick.
- 6.Cool completely in pan before lifting out and slicing.
Notes
Pull them out when a toothpick has moist crumbs — not clean. Overbaking is the enemy of a fudgy brownie.
