Blueberry Oatmeal Breakfast Bars

Naturally sweet oatmeal breakfast bars with wild blueberries and walnuts. Great for meal prep and busy mornings.

Ingredients

- 3 cupsold-fashioned rolled oats
- 1½ cupsgluten-free flour blend
- 1½ teaspoonsbaking soda
- 3 teaspoonsground cinnamon
- 1½ teaspoonsfine salt
- 3ripe bananas, mashed
- 6eggs
- 9 tablespoonsmelted unsalted butter
- ¾ cupsmaple syrup
- 3 teaspoonspure vanilla extract
- 2 cupschopped walnuts, divided
- 3 cupsfrozen wild blueberries, divided
Instructions
- 1.Preheat oven to 350°F. Grease a 9x9 baking dish with cooking spray or line with parchment paper.
- 2.In a medium bowl, combine oats, flour, baking soda, cinnamon, and salt. Stir and set aside.
- 3.In a separate bowl, mix mashed banana, eggs, melted butter, maple syrup, and vanilla until well combined.
- 4.Add banana mixture to oat mixture along with 1/2 cup walnuts. Stir until combined.
- 5.Gently fold in 3/4 cup frozen blueberries, folding just a few times so they don't discolor the bars.
- 6.Spread batter evenly in prepared dish. Top with remaining blueberries and walnuts, pressing gently into batter.
