Vegan Grain Bowl

Easy grain bowl with roasted sweet potatoes, protein-packed chickpeas, and a creamy homemade tahini dressing. Perfect for meal prep.

- 1medium sweet potato, peeled and cut into 1-inch chunks
- 3 tablespoonsextra-virgin olive oil, divided
- ½ teaspoonsalt, divided
- ¼ teaspoonground pepper, divided
- 2 cupscooked quinoa
- 1 15-oz cancanned chickpeas, drained and rinsed
- 2 tablespoonstahini
- 2 tablespoonswater
- 1 tablespoonlemon juice
- ½garlic clove, minced
- 1firm ripe avocado, diced
- ¼ cupfresh cilantro or parsley, chopped
Instructions
- 1.Preheat oven to 425°F. Toss sweet potato with 1 tablespoon oil and 1/4 teaspoon each salt and pepper. Spread on a rimmed baking sheet and roast 15–18 minutes until tender, stirring once.
- 2.Meanwhile, whisk tahini, water, lemon juice, remaining 2 tablespoons oil, remaining salt and pepper together in a small bowl to make the dressing.
