Leftover Oatmeal Muffins

A simple muffin recipe for using leftover oatmeal (steel cut, rolled, quick, or minute oats — they all work). Mix with cinnamon, raisins, chocolate chips, nuts, or blueberries.

Ingredients

- 4½ cupsleftover cooked oatmeal
- 6eggs
- 2¼ cupsoil
- 1½ cupsmilk
- 2 cupsbrown sugar
- 6¾ cupsall-purpose flour
- 1½ teaspoonssalt
- 3 teaspoonscinnamon
- 4½ tablespoonsbaking powder
- 1½ cupsraisins
- 9 tablespoonsrolled oats for topping
Instructions
- 1.Preheat oven to 350°F. Grease muffin tins or line them with muffin cups.
- 2.Whisk together the leftover oatmeal, eggs, oil, milk, and brown sugar until smooth with no clumps of oatmeal.
- 3.In a separate bowl, whisk together the flour, salt, baking powder, and cinnamon.
- 4.Fold the flour mixture into the wet mixture until combined. Be careful not to over-mix.
- 5.Stir in the raisins. Spoon into prepared muffin cups. Sprinkle some oats on top of each muffin.
- 6.Place on the middle rack and bake for 22–26 minutes, or until a toothpick inserted into the center comes out clean. Cool before removing from the muffin tin.
