Instant Pot Gyro Casserole

Ground meat seasoned with Greek seasoning and rice cooked together in the Instant Pot, served with creamy yogurt cucumber sauce and fun toppings.

Ingredients

- 2 poundsground beef or ground lamb
- 10garlic cloves, minced (for meat)
- 4 teaspoonsGreek seasoning
- 2 cupsdiced onion
- 4½ cupsbasmati rice, converted
- 2 14.5-oz canspetite diced tomatoes
- 4½ cupschicken broth
- 2 cupsplain Greek yogurt (full fat)
- 4 tablespoonsdried dill
- 2cucumbers, seeded and finely diced
- 4garlic cloves, minced (for tzatziki)
- 1 teaspoonsalt
- ½ teaspoonblack pepper
Instructions
- 1.Turn Instant Pot to sauté setting. Add ground meat and break it up. When display says HOT, add in the ground meat and brown for about 5 minutes.
- 2.Drain off excess grease. Stir in the Greek seasoning and the garlic cloves. Add in the onion, tomatoes, broth, and rice.
- 3.Pour in the broth and scrape bottom of pot so nothing is sticking. Turn off Instant Pot. Set the manual/pressure cook button to 3 minutes. Cook on high pressure.
- 4.Let the Instant Pot natural release for 5–10 minutes, then move valve to venting. Remove the lid and let the rice rest for an additional 5 minutes. Stir.
- 5.Make the tzatziki sauce: stir together the yogurt, cucumber, dill, garlic, salt, and pepper together in a bowl.
