Instant Pot Marry Me Chicken

Chicken cutlets in a flavorful creamy sauce with bacon, garlic, and roasted red bell pepper strips. So good that whoever you serve it to will want to marry you!

Ingredients

- 4 poundsboneless skinless chicken breasts or tenders
- 4 tablespoonsbutter
- 2 tablespoonsgarlic, minced
- salt and pepper
- 1½ teaspoonssmoked paprika
- 1½ teaspoonsdried thyme
- 1 teaspoondried oregano
- ½ teaspooncayenne pepper
- 1 cupsun-dried tomatoes
- 1 cupheavy cream
- 1 cupshredded Parmesan cheese
- 1 tablespooncornstarch
- 1 cupchicken broth
- ⅔ cupbacon crumbles
Instructions
- 1.If using chicken breasts, cut them into cutlets by slicing in half so they are thinner. Pat dry. Sprinkle both sides with cayenne, smoked paprika, oregano, thyme, and basil. Season with salt and pepper.
- 2.Turn the Instant Pot to sauté setting. Once display says HOT, add in the butter and swirl around to melt. Add in the chicken and brown the chicken with garlic and pepper for about 3 minutes on each side in batches. Move chicken to a plate.
- 3.Add the broth, garlic, bacon, thyme, paprika, basil, and sun-dried tomatoes to the pot. Stir. Place the chicken back in. Set the Instant Pot to high pressure for 10 minutes with natural release 10 minutes.
- 4.Open the Instant Pot to sauté setting. Stir the cornstarch in with the heavy cream. Stir the mixture into the Instant Pot to thicken up the sauce. Stir in Parmesan cheese and season to taste.
