Creamy White Chicken Enchiladas

Creamy chicken enchiladas with a delicious creamy white sauce made with flour tortillas, shredded chicken, cheese, and green chiles.

Ingredients

- 4 cupsshredded cooked chicken (rotisserie works great)
- 20flour tortillas (taco size)
- 4 cupsshredded Monterey Jack cheese
- 6 tablespoonsbutter
- 6 tablespoonsall-purpose flour
- 4 cupschicken broth
- 2 cupssour cream
- 8 ozdiced green chiles
- salt, pepper, and Adobo seasoning to taste
Instructions
- 1.Preheat oven to 350°F. Spray 9×13-inch baking dish with nonstick cooking spray.
- 2.In a medium-sized bowl, mix together cooked shredded chicken with one cup of cheese and green chiles.
- 3.Roll about 1/4 cup of the chicken mixture into each of the flour tortillas and place them seam-side down in rows in the prepared dish.
- 4.In a large saucepan, melt butter and whisk in flour. Cook and thicken for 1 minute. Add chicken broth and let cook, stirring frequently, until mixture is thickened and smooth.
- 5.Add sour cream and green chiles. Be sure not to let the mixture boil. Add salt, pepper, and Adobo seasoning to taste.
