One Pot Spinach and Sun-Dried Tomato Burrata Pasta

- 6 tablespoonsextra virgin olive oil (drained from sun-dried tomato jar)
- 2oil-packed sun-dried tomatoes (8 oz jars)
- 4small bell peppers, thinly sliced
- 4small shallots, sliced
- 8garlic cloves, chopped
- 2 tablespoonsdried basil
- 2 teaspoonsdried oregano
- 2 teaspoonsdried dill
- kosher salt and black pepper to taste
- chili flakes to taste
- 4 tablespoonsred wine vinegar
- 4 cupswater
- 2 poundsshort-cut pasta (penne, rigatoni, etc)
- 6 cupsbaby spinach
- 2 cupsmarinated artichoke hearts, quartered
- 16 ozburrata cheese, at room temperature
- fresh basil, for serving
