Bruschetta Chicken Casserole

Ingredients

- 3 poundschicken breasts, cut into bite-sized pieces
- 3 tablespoonsolive oil
- 1½medium onion, diced
- salt and pepper to taste
- 12 ozchicken stuffing mix
- 12 ozmozzarella cheese, shredded
- 21¾ ozItalian-style diced tomatoes, undrained
- ⅜ cupbalsamic vinaigrette, divided
- 3 tablespoonsgarlic, minced
- 3 tablespoonsItalian seasoning
- ½ cupbasil leaves, chopped (optional)
Instructions
- 1.Preheat oven to 375°F. Spray a 9×13-inch casserole dish with cooking spray.
- 2.In a large skillet, heat olive oil then add chicken and diced onion. Cook over medium-high heat until chicken is cooked through and begins to brown, stirring frequently. Season with salt and pepper.
- 3.Transfer chicken and onions to the prepared casserole dish.
- 4.In a large mixing bowl, combine stuffing mix, half (1 cup) of shredded cheese, canned tomatoes, half (1/4 cup) of the balsamic vinegar, minced garlic, and Italian seasoning. Mix well until thoroughly combined.
- 5.Spread the stuffing mixture evenly over the chicken. Top with remaining mozzarella cheese.
