Lentil-Walnut Vegan Tacos

Hearty, satisfying vegan tacos with a savory lentil and walnut filling, fire roasted tomatoes, and fresh toppings.

Ingredients

- 1 cupwalnuts
- 2chipotle peppers in adobo sauce
- 3 cupscooked lentils
- 1 teaspooncumin
- 1 teaspoonsalt
- 1avocado
- ¼red onion, quartered
- 4garlic cloves
- 1 tablespoonavocado oil
- 1 14-oz canfire roasted tomatoes
- 1 teaspoondried oregano
- 1tomato, diced
- 5romaine lettuce leaves
- 12soft or hard taco shells
Instructions
- 1.Chop the walnuts, garlic, and chipotle peppers.
- 2.Add the oil to a large frying pan and bring to medium heat. Add the garlic and cook for 2 minutes. Add the walnuts and cook 3 more minutes.
