Hearty vegetarian meatballs made from green lentils, mushrooms, and brown rice, glazed with barbecue sauce and baked until crispy.

Ingredients

- 1 cupgreen uncooked lentils
- 2 teaspoonsoil, divided
- ½onion, chopped
- 2 cupsdiced mushrooms
- 1 cupcooked brown rice
- ⅔ cuprolled oats
- ½ cupparsley
- 1 teaspoongarlic powder
- 1 teaspoonItalian seasoning
- 1 teaspoonsalt
- ½ cupbreadcrumbs
- 2 tablespoonsWorcestershire sauce
- ¾ cupbarbecue sauce, divided
- ½ teaspoonliquid smoke
- chopped parsley for garnish (optional)
Instructions
- 1.Cook lentils according to package instructions. Add 1 teaspoon of oil to a frying pan and bring to medium heat. Drop in the onion and mushrooms and cook for 5 minutes.
