All-American cheeseburger flavors in a creamy, comforting soup with ground beef, potatoes, carrots, and Velveeta cheese.

Ingredients

- ½ poundground beef
- 4 tablespoonsbutter, divided
- ¾ cupchopped onion
- ¾ cupshredded carrots
- ¾ cupdiced celery
- 1 teaspoondried basil
- 1 teaspoondried parsley flakes
- 1¾ poundscubed peeled potatoes
- 3 cupschicken broth
- ¼ cupall-purpose flour
- 3 cupsshredded Velveeta cheese
- 1½ cupswhole milk
- ¾ teaspoonsalt
- ⅜ teaspoonpepper
- ¼ cupsour cream
Instructions
- 1.In a large saucepan over medium heat, cook and crumble beef until no longer pink, 6–8 minutes. Drain and set aside. In the same saucepan, melt 1 tablespoon butter. Sauté onion, carrots, celery, basil, and parsley until vegetables are tender, about 10 minutes.
- 2.Add potatoes, ground beef, and broth. Bring to a boil. Reduce heat and simmer, covered, until potatoes are tender, 10–12 minutes.
- 3.Meanwhile, in a small skillet melt remaining butter. Add flour and cook, stirring, until bubbly, 3–5 minutes. Add to soup and bring to a boil. Cook and stir 2 minutes. Reduce heat to low.
- 4.Stir in cheese, milk, salt, and pepper. Cook until cheese melts. Remove from heat and blend in sour cream. Serve with onion rings and green onions if desired.
