Christina's Red Lentil and Kale Soup

A warming, spiced soup with red lentils, sweet potato, coconut milk, and kale. Serve with rice or naan.

Ingredients

- 1large onion, diced
- 3garlic cloves, minced
- 1 teaspoonturmeric
- 2 teaspoonsgaram masala
- 1 teaspooncumin
- 1 teaspoonsalt
- 1 candiced tomatoes
- 1large sweet potato, peeled and cubed
- 5 cupswater or chicken stock
- 1 cupdried red lentils
- 1 cancoconut milk
- 1bunch of kale, de-stemmed and chopped
Instructions
- 1.Sauté onion, garlic, turmeric, garam masala, cumin, and salt in ghee or oil until onions are translucent and garlic is fragrant. Add diced tomatoes.
- 2.Add sweet potato, water or stock, and lentils. Bring to a boil, then boil for 5 minutes, stirring occasionally. If using water, add 1 tbsp chicken bouillon.
- 3.Add coconut milk and reduce heat to a simmer.
- 4.When sweet potatoes are softened and lentils are cooked, add the kale and stir to wilt for about 5 minutes.
- 5.Serve with rice or naan. Enjoy!
