Buttery Soft Pretzels (Easy, No-Boil)

Incredibly soft, buttery homemade pretzels that skip the traditional boiling step. No stand mixer needed — just mix, rise, shape, dip, and bake.

Ingredients

- 5 cupsall-purpose flour
- 2 teaspoonsinstant yeast
- 1½ teaspoonssalt
- ½ cupsugar
- 1½ cupswarm water
- 1 tablespoonneutral oil or olive oil
- ½ cupbaking soda
- 4 cupshot water
- kosher salt for sprinkling
- 4 tablespoonsmelted butter for brushing
Instructions
- 1.In a large bowl, whisk together flour, yeast, salt, and sugar. Add water and oil and stir with a rubber spatula until a shaggy dough forms. Use hands to briefly knead in the bowl, then turn onto a work surface and continue kneading until tacky to the touch, about 1 minute.
- 2.Place dough back in the mixing bowl, cover with a towel, and let rise in a warm spot for 1 hour. Dough will not necessarily double in volume.
- 3.Preheat oven to 425°F. Turn dough onto a work surface and divide into 12 equal pieces (each about 75 grams). Roll each piece into a 12-inch log.
- 4.Once all portions are rolled, continue to roll each to 22–24 inches long. Twist each piece into a pretzel shape and transfer to a lightly oiled sheet pan.
