  • 1 lbground beef (80/20)
  • ½ lbground pork
  • 1 largeonion, finely diced
  • 2 mediumcarrots, finely diced
  • 2celery stalks, finely diced
  • 4garlic cloves, minced
  • 28 ozcanned crushed tomatoes
  • ½ cupwhole milk
  • ½ cupdry red wine
  • 2 tbsptomato paste
  • 2 tbspolive oil
  • 1 lbspaghetti
  • for servingParmesan, grated
  • to tastesalt and pepper

Instructions

  1. 1.Heat olive oil in a large heavy pot over medium heat. Add onion, carrot, and celery. Cook until softened, about 8 minutes.
  2. 2.Add garlic and cook 1 minute more. Push vegetables to the side and add both meats. Brown, breaking up with a spoon, until no pink remains.
  3. 3.Pour in wine and cook, stirring, until mostly evaporated. Stir in tomato paste and cook 2 minutes.
  4. 4.Add crushed tomatoes and milk. Season with salt and pepper. Bring to a gentle simmer.
  5. 5.Partially cover and cook on the lowest heat for 1 hour, stirring occasionally, until sauce is thick and rich.
  6. 6.Cook spaghetti to al dente. Toss with sauce. Serve with grated Parmesan.

Notes

The sauce freezes beautifully — make a double batch and freeze half in portions.
