Spaghetti Bolognese

- 1 lbground beef (80/20)
- ½ lbground pork
- 1 largeonion, finely diced
- 2 mediumcarrots, finely diced
- 2celery stalks, finely diced
- 4garlic cloves, minced
- 28 ozcanned crushed tomatoes
- ½ cupwhole milk
- ½ cupdry red wine
- 2 tbsptomato paste
- 2 tbspolive oil
- 1 lbspaghetti
- for servingParmesan, grated
- to tastesalt and pepper
Instructions
- 1.Heat olive oil in a large heavy pot over medium heat. Add onion, carrot, and celery. Cook until softened, about 8 minutes.
- 2.Add garlic and cook 1 minute more. Push vegetables to the side and add both meats. Brown, breaking up with a spoon, until no pink remains.
- 3.Pour in wine and cook, stirring, until mostly evaporated. Stir in tomato paste and cook 2 minutes.
- 4.Add crushed tomatoes and milk. Season with salt and pepper. Bring to a gentle simmer.
- 5.Partially cover and cook on the lowest heat for 1 hour, stirring occasionally, until sauce is thick and rich.
- 6.Cook spaghetti to al dente. Toss with sauce. Serve with grated Parmesan.
Notes
The sauce freezes beautifully — make a double batch and freeze half in portions.
