  • 4chicken breasts, pounded thin
  • 1 cupItalian breadcrumbs
  • ½ cupParmesan, grated
  • 2eggs, beaten
  • 1½ cupsmarinara sauce
  • 8 ozfresh mozzarella, sliced
  • 3 tbspolive oil
  • for servingfresh basil
  • to tastesalt and pepper

Instructions

  1. 1.Season chicken with salt and pepper. Mix breadcrumbs and Parmesan in a shallow dish.
  2. 2.Dip chicken in beaten egg, then press into the breadcrumb mixture to coat both sides.
  3. 3.Heat olive oil in an oven-safe skillet over medium-high heat. Cook chicken 3–4 minutes per side until golden.
  4. 4.Spoon marinara over each piece and top with mozzarella slices.
  5. 5.Transfer skillet to a 400°F oven and bake 10–12 minutes until cheese is bubbly and chicken is cooked through.
  6. 6.Garnish with fresh basil. Serve with pasta or a green salad.
