- 4chicken breasts, pounded thin
- 1 cupItalian breadcrumbs
- ½ cupParmesan, grated
- 2eggs, beaten
- 1½ cupsmarinara sauce
- 8 ozfresh mozzarella, sliced
- 3 tbspolive oil
- for servingfresh basil
- to tastesalt and pepper
Instructions
- 1.Season chicken with salt and pepper. Mix breadcrumbs and Parmesan in a shallow dish.
- 2.Dip chicken in beaten egg, then press into the breadcrumb mixture to coat both sides.
- 3.Heat olive oil in an oven-safe skillet over medium-high heat. Cook chicken 3–4 minutes per side until golden.
- 4.Spoon marinara over each piece and top with mozzarella slices.
- 5.Transfer skillet to a 400°F oven and bake 10–12 minutes until cheese is bubbly and chicken is cooked through.
- 6.Garnish with fresh basil. Serve with pasta or a green salad.
