A vibrant, no-cook salad of ripe tomatoes, cucumber, olives, and feta with a bright lemon-oregano dressing.

- 3 mediumripe tomatoes, cut into wedges
- 1 largecucumber, sliced
- ½red onion, thinly sliced
- ½ cupKalamata olives
- 4 ozfeta cheese, crumbled or in a block
- 3 tbspolive oil
- 1 tbspred wine vinegar
- 1 tspdried oregano
- to tastesalt and pepper
Instructions
- 1.Combine tomatoes, cucumber, red onion, and olives in a large bowl.
- 2.Whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- 3.Pour dressing over the salad and toss gently.
- 4.Top with feta. Serve immediately or let sit 10 minutes for the flavors to meld.
