A vibrant, no-cook salad of ripe tomatoes, cucumber, olives, and feta with a bright lemon-oregano dressing.

  • 3 mediumripe tomatoes, cut into wedges
  • 1 largecucumber, sliced
  • ½red onion, thinly sliced
  • ½ cupKalamata olives
  • 4 ozfeta cheese, crumbled or in a block
  • 3 tbspolive oil
  • 1 tbspred wine vinegar
  • 1 tspdried oregano
  • to tastesalt and pepper

Instructions

  1. 1.Combine tomatoes, cucumber, red onion, and olives in a large bowl.
  2. 2.Whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  3. 3.Pour dressing over the salad and toss gently.
  4. 4.Top with feta. Serve immediately or let sit 10 minutes for the flavors to meld.
