Avocado Toast with Poached Eggs

Creamy smashed avocado on toasted sourdough topped with perfectly poached eggs and chili flakes.

- 2 thick slicessourdough bread
- 2ripe avocados
- 2 largeeggs
- 1 tbsplemon juice
- 1 tbspwhite vinegar
- pinchred chili flakes
- to tastesalt and pepper
Instructions
- 1.Toast the sourdough until golden and crisp.
- 2.Scoop avocado into a bowl, add lemon juice, salt and pepper, and mash to your liking.
- 3.Bring a saucepan of water to a gentle simmer. Add white vinegar. Crack each egg into a small cup.
- 4.Swirl the water, slide in an egg, and poach for 3 minutes for a runny yolk. Remove with a slotted spoon. Repeat.
- 5.Spread avocado on toast, top with a poached egg, and finish with chili flakes.
