Avocado Toast with Poached Eggs

Creamy smashed avocado on toasted sourdough topped with perfectly poached eggs and chili flakes.

  • 2 thick slicessourdough bread
  • 2ripe avocados
  • 2 largeeggs
  • 1 tbsplemon juice
  • 1 tbspwhite vinegar
  • pinchred chili flakes
  • to tastesalt and pepper

Instructions

  1. 1.Toast the sourdough until golden and crisp.
  2. 2.Scoop avocado into a bowl, add lemon juice, salt and pepper, and mash to your liking.
  3. 3.Bring a saucepan of water to a gentle simmer. Add white vinegar. Crack each egg into a small cup.
  4. 4.Swirl the water, slide in an egg, and poach for 3 minutes for a runny yolk. Remove with a slotted spoon. Repeat.
  5. 5.Spread avocado on toast, top with a poached egg, and finish with chili flakes.
