A diner classic — creamy tuna salad on toasted bread under bubbling melted cheddar.

- 2 cans (5 oz each)canned tuna, drained
- 3 tbspmayonnaise
- 1 stalkcelery, finely chopped
- 2 tbspred onion, finely chopped
- 1 tspDijon mustard
- 4 slicessourdough or rye bread
- 4 slicescheddar cheese, sliced
- to tastesalt and pepper
Instructions
- 1.Mix tuna, mayonnaise, celery, red onion, and mustard in a bowl. Season with salt and pepper.
- 2.Preheat the broiler. Toast the bread lightly.
- 3.Spread tuna mixture generously on the toast. Top each with a slice of cheddar.
- 4.Broil for 2–3 minutes until the cheese is bubbly and beginning to brown. Watch closely.
- 5.Serve hot, open-faced or sandwiched together.
