A diner classic — creamy tuna salad on toasted bread under bubbling melted cheddar.

  • 2 cans (5 oz each)canned tuna, drained
  • 3 tbspmayonnaise
  • 1 stalkcelery, finely chopped
  • 2 tbspred onion, finely chopped
  • 1 tspDijon mustard
  • 4 slicessourdough or rye bread
  • 4 slicescheddar cheese, sliced
  • to tastesalt and pepper

Instructions

  1. 1.Mix tuna, mayonnaise, celery, red onion, and mustard in a bowl. Season with salt and pepper.
  2. 2.Preheat the broiler. Toast the bread lightly.
  3. 3.Spread tuna mixture generously on the toast. Top each with a slice of cheddar.
  4. 4.Broil for 2–3 minutes until the cheese is bubbly and beginning to brown. Watch closely.
  5. 5.Serve hot, open-faced or sandwiched together.
