Lemon Herb Roasted Chicken

A whole roasted chicken with crispy golden skin and incredibly juicy meat, perfumed with lemon, garlic, and herbs.

  • 1 (about 4 lbs)whole chicken
  • 2lemon
  • 6garlic cloves
  • 3 sprigsfresh rosemary
  • 4 sprigsfresh thyme
  • 4 tbspbutter, softened
  • 2 tbspolive oil
  • generouslysalt and pepper

Instructions

  1. 1.Preheat oven to 425°F. Pat chicken dry with paper towels and season generously with salt inside and out.
  2. 2.Mix softened butter with minced garlic, lemon zest, and chopped herbs. Rub under and over the skin.
  3. 3.Halve the lemons and stuff them inside the cavity with remaining garlic and herb sprigs.
  4. 4.Truss the legs together, drizzle with olive oil, and place breast-side up in a roasting pan.
  5. 5.Roast 15 minutes at 425°F, then reduce to 375°F and roast 60–70 more minutes until juices run clear and internal temp is 165°F.
  6. 6.Rest 15 minutes before carving.

Notes

Pat the chicken completely dry before roasting — this is the key to crispy skin.
