Lemon Herb Roasted Chicken

A whole roasted chicken with crispy golden skin and incredibly juicy meat, perfumed with lemon, garlic, and herbs.

- 1 (about 4 lbs)whole chicken
- 2lemon
- 6garlic cloves
- 3 sprigsfresh rosemary
- 4 sprigsfresh thyme
- 4 tbspbutter, softened
- 2 tbspolive oil
- generouslysalt and pepper
Instructions
- 1.Preheat oven to 425°F. Pat chicken dry with paper towels and season generously with salt inside and out.
- 2.Mix softened butter with minced garlic, lemon zest, and chopped herbs. Rub under and over the skin.
- 3.Halve the lemons and stuff them inside the cavity with remaining garlic and herb sprigs.
- 4.Truss the legs together, drizzle with olive oil, and place breast-side up in a roasting pan.
- 5.Roast 15 minutes at 425°F, then reduce to 375°F and roast 60–70 more minutes until juices run clear and internal temp is 165°F.
- 6.Rest 15 minutes before carving.
Notes
Pat the chicken completely dry before roasting — this is the key to crispy skin.
