Baked Salmon with Asparagus

  • 4 (6 oz each)salmon fillets
  • 1 bunchasparagus, trimmed
  • 2 tbspolive oil
  • 2garlic cloves, minced
  • 1lemon, sliced
  • 1 tbspDijon mustard
  • 1 tbsphoney
  • 2 tbspfresh dill or parsley
  • to tastesalt and pepper

Instructions

  1. 1.Preheat oven to 400°F. Line a baking sheet with foil.
  2. 2.Toss asparagus with 1 tbsp olive oil, salt, and pepper. Spread on the baking sheet.
  3. 3.Mix mustard, honey, garlic, and remaining olive oil. Place salmon on the sheet pan and brush with the glaze.
  4. 4.Top salmon with lemon slices. Bake 15–18 minutes until salmon flakes easily and asparagus is tender.
  5. 5.Garnish with fresh herbs and serve directly from the pan.
