Deeply caramelized onions in a rich beef broth, topped with a crusty crouton and bubbling Gruyère.

- 3 lbsyellow onions, thinly sliced
- 4 tbspbutter
- 1 tbspolive oil
- 6 cupsbeef broth
- ½ cupdry white wine
- 3 sprigsfresh thyme
- 1bay leaf
- 4baguette slices
- 2 cupsGruyère cheese, shredded
- to tastesalt and pepper
Instructions
- 1.Melt butter with oil in a large heavy pot over medium-low heat. Add onions and cook, stirring every 10 minutes, for 45–60 minutes until deeply golden and caramelized.
- 2.Add wine and scrape up any browned bits. Cook until evaporated.
- 3.Add broth, thyme, and bay leaf. Simmer 15 minutes. Season generously.
- 4.Toast baguette slices under the broiler until crisp.
- 5.Ladle soup into oven-safe bowls. Float a crouton on top and pile with Gruyère.
- 6.Broil 2–3 minutes until cheese is bubbly and golden. Serve immediately.
Notes
The caramelization takes time — resist the urge to rush it. Low and slow is the secret.
