Ingredients

  • 3 lbsyellow onions, thinly sliced
  • 4 tbspbutter
  • 1 tbspolive oil
  • 6 cupsbeef broth
  • ½ cupdry white wine
  • 3 sprigsfresh thyme
  • 1bay leaf
  • 4baguette slices
  • 2 cupsGruyère cheese, shredded
  • to tastesalt and pepper

Instructions

  1. 1.Melt butter with oil in a large heavy pot over medium-low heat. Add onions and cook, stirring every 10 minutes, for 45–60 minutes until deeply golden and caramelized.
  2. 2.Add wine and scrape up any browned bits. Cook until evaporated.
  3. 3.Add broth, thyme, and bay leaf. Simmer 15 minutes. Season generously.
  4. 4.Toast baguette slices under the broiler until crisp.
  5. 5.Ladle soup into oven-safe bowls. Float a crouton on top and pile with Gruyère.
  6. 6.Broil 2–3 minutes until cheese is bubbly and golden. Serve immediately.

Notes

The caramelization takes time — resist the urge to rush it. Low and slow is the secret.
