  • 2 lbsbone-in chicken thighs
  • 3carrots, sliced
  • 3celery stalks, sliced
  • 1 largeonion, diced
  • 4garlic cloves
  • 8 cupschicken broth
  • 2 cupsegg noodles
  • ¼ cupfresh parsley
  • 2bay leaves
  • to tastesalt and pepper

Instructions

  1. 1.Place chicken thighs in a large pot with broth, garlic, and bay leaves. Bring to a boil, then simmer 25 minutes.
  2. 2.Remove chicken and let cool slightly. Shred meat and discard bones and skin.
  3. 3.Add carrots, celery, and onion to the broth. Simmer 10 minutes.
  4. 4.Add egg noodles and cook until tender, about 8 minutes.
  5. 5.Return shredded chicken to the pot. Stir in parsley, season generously, and serve.

Notes

Using bone-in chicken thighs instead of breasts gives the broth much more flavor and body.
