- 2 lbsbone-in chicken thighs
- 3carrots, sliced
- 3celery stalks, sliced
- 1 largeonion, diced
- 4garlic cloves
- 8 cupschicken broth
- 2 cupsegg noodles
- ¼ cupfresh parsley
- 2bay leaves
- to tastesalt and pepper
Instructions
- 1.Place chicken thighs in a large pot with broth, garlic, and bay leaves. Bring to a boil, then simmer 25 minutes.
- 2.Remove chicken and let cool slightly. Shred meat and discard bones and skin.
- 3.Add carrots, celery, and onion to the broth. Simmer 10 minutes.
- 4.Add egg noodles and cook until tender, about 8 minutes.
- 5.Return shredded chicken to the pot. Stir in parsley, season generously, and serve.
Notes
Using bone-in chicken thighs instead of breasts gives the broth much more flavor and body.
