Zucchini Noodles with Pesto

Light, fresh zucchini noodles tossed in vibrant basil pesto with cherry tomatoes and toasted pine nuts.

  • 3large zucchini
  • 1½ cups packedfresh basil
  • 3 tbsppine nuts
  • ¼ cupParmesan, grated
  • 1garlic clove
  • 3 tbspolive oil
  • 1 cupcherry tomatoes, halved
  • 1 tbsplemon juice
  • to tastesalt and pepper

Instructions

  1. 1.Spiralize zucchini into noodles. Place in a colander, toss with ½ tsp salt, and let drain 10 minutes. Pat dry.
  2. 2.Toast pine nuts in a dry pan 2 minutes. Blend basil, pine nuts, garlic, and Parmesan. Drizzle in olive oil with motor running until smooth.
  3. 3.Toss zucchini noodles with pesto. Add cherry tomatoes and lemon juice. Season to taste.
  4. 4.Serve immediately, topped with extra Parmesan and cracked pepper.
