Light and Fluffy Multigrain Sandwich Bread

Light and fluffy sandwich bread filled with multigrain cereal and topped with a delicious crunchy seed mixture of sesame, flax, and poppy seeds.

- 1 cupmulti-grain cereal (e.g. 7-grain)
- 4 cupsboiling water
- 4½ teaspoonsactive dry or instant yeast
- 8 cupsunbleached all-purpose flour
- 2 tablespoonsneutral cooking oil or olive oil
- 2 tablespoonsdark brown sugar or honey
- 3 teaspoonsfine salt
- 4 teaspoonssesame seeds
- 4 teaspoonsflax seeds
- 4 teaspoonspoppy seeds
Instructions
- 1.Place multigrain cereal in a large bowl. Pour boiling water over, then let stand until the mixture cools to between 105°F and 115°F, about 20 minutes.
- 2.Sprinkle yeast over cereal mixture. Add 1 cup flour, oil, brown sugar, and salt. Stir until smooth. Gradually mix in enough remaining flour to form a smooth, moist dough. Cover with plastic wrap and let rest 15 minutes.
- 3.Turn out dough onto a floured surface. Knead until smooth and elastic, about 5 minutes. Oil a large bowl, add dough, flip to oil all sides. Cover and let rise in a warm spot until doubled, about 1 hour.
