A fluffy three-egg omelette loaded with sautéed peppers, mushrooms, and melty cheddar.

  • 3 largeeggs
  • 2 tbspmilk
  • 1 tbspbutter
  • ¼ cupbell pepper, diced
  • ¼ cupmushrooms, sliced
  • 2 tbsponion, diced
  • ¼ cupcheddar cheese, shredded
  • to tastesalt and pepper

Instructions

  1. 1.Whisk eggs with milk, salt, and pepper until smooth.
  2. 2.Sauté pepper, mushrooms, and onion in a nonstick pan over medium heat until softened, about 3 minutes. Set aside.
  3. 3.Add butter to the pan. Pour in egg mixture. As edges set, push them gently toward the center.
  4. 4.When mostly set but still slightly glossy on top, add veggies and cheese to one half.
  5. 5.Fold the omelette over the filling and slide onto a plate. Serve immediately.
