A fluffy three-egg omelette loaded with sautéed peppers, mushrooms, and melty cheddar.

- 3 largeeggs
- 2 tbspmilk
- 1 tbspbutter
- ¼ cupbell pepper, diced
- ¼ cupmushrooms, sliced
- 2 tbsponion, diced
- ¼ cupcheddar cheese, shredded
- to tastesalt and pepper
Instructions
- 1.Whisk eggs with milk, salt, and pepper until smooth.
- 2.Sauté pepper, mushrooms, and onion in a nonstick pan over medium heat until softened, about 3 minutes. Set aside.
- 3.Add butter to the pan. Pour in egg mixture. As edges set, push them gently toward the center.
- 4.When mostly set but still slightly glossy on top, add veggies and cheese to one half.
- 5.Fold the omelette over the filling and slide onto a plate. Serve immediately.
